ROCKY ROAD
Rocky road is one of my favourite treats, I mean it's made of lots of chocolate, biscuits and marshmallows so what's not to love? My mum claims to hate digestive biscuits and marshmallows but I have seen her tucking into my rocky road so many times! One of the best things about this recipe is that it requires no baking so is great for making quickly and if you aren't a baking pro. Also you can mix the ingredients up, using any left over sweets and biscuits.
Ingredients
200g milk chocolate
135 g butter
100g digestive biscuits
100g chocolate chip cookies
3 tbsp golden syrup
100g mini marshmallows
25g dried fruit
Method
1. Grease and line a small tin, I used a 23cm square one
2. Break the biscuits into small chunks, you could use your hands or put them in a freezer bag and bash (technical term obviously!!) with a rolling pin
3. Melt the chocolate, butter and syrup in a pan over a gentle heat
4. Add the biscuits, fruit and marshmallows to the chocolate mixture and mix until fully combined
5. Tip into the prepared tin and press down firmly, making sure it is into all corners
6. Refrigerate for approximately two hours then dust with icing sugar before slicing
