CREAM SODA RICE PUDDING

 

So I must confess that I don't like milk, yes I have black tea...I'm aware that this may disgust many of you and can imagine all of the shocked faces and questions of "Who doesn't like milk?" Obciously, due to the milk issue, rice pudding has been something I have avoided but when I heard one of my Mum's Slimming World friends mention making it with cream soda I had to give it a go. I must admit that I was rather sceptical, especially after smelling the cream soda (OMG how sweet!?) but with the yoghurt and cinnamon added it was delicious. I have now become quite obsessed with this recipe and love to add fruit for a healthy breakfast idea. 

 

Serves 4

 

Ingredients 

 

75g pudding rice

500ml diet cream soda

Vanilla yoghurt  and cinnamon to taste

 

Method

 

1. Add the rice and cream soda to a pan and bring to the boil

2. Let the mixture simmer on a low heat until all of the liquid has been absorbed, this should take 20-25 minutes

3. Stir in fat free vanilla yoghurt and sprinkle with vanilla

 

Tip- Make a batch up one evening when cooking your evening meal and save it for the next 4 breakfasts. If doing this don't add the yoghurt until you eat it else it will harden and more yoghurt will be needed.
