OREO BROWNIE
One of my best friends has a slight obsession with oreos (who can blame her!), so for a summer get together I decided to bake some oreo brownies for her to enjoy. I adapted my easy malteser brownie recipe by simply swapping the maltesers for a packet of oreos and the empty baking tin I was given when I left said it all!
Ingredients
150g unsalted butter
175g dark chocolate
2 eggs
225g caster sugar
150g self-raising flour
1 pack of oreos, broken into chunks
Method
1. Preheat the oven to 180ËšC
2. Lightly grease and line a 23cm square tin
3. Gently melt the butter and dark chocolate in a bowl over a pan of water at a low heat. Once melted stand aside to cool
4. In a separate bowl whisk the eggs and sugar
5. Add the chocolate and butter mixture to the eggs and sugar and whisk until combined
6. Sieve the flour into the mixture and continue to whisk until the mixture is quite thick
7. Then fold in the oreo chunks ensuring that they are evenly distributed
8. Pour the mixture into the baking tin using a palette knife to smooth the top and spread the mixture into the corners
9. Bake for approximately 20 minutes or until the top begins to crack and a skewer is only lightly covered in brownie mixture, to ensure they are gooey
10. Cool then cut into 12 squares, or less if you looovvveee brownie as much as me!
Tip- For an alternative method don't break the oreos into chunks. Instead pour half of the brownie mixture into the tin, lay the oreos on top and then add the reamining mixture on top!
