BANANA CAKE
Bananas are one of my favourite fruits but I cannot stand them when they have turned too yellow and black marks begin to appear. As I had some bananas that I was refusing to eat as they had got to this stage I decided to turn them into a banana loaf and what a good decision that was! I had a quick look on the internet and found a Mary Berry recipe so gave it a try as afterall she is the Queen of cakes...the recipe didn't disappoint, despite being simple it is full of flavour.
Ingredients
100g soft butter
175g caster sugar
2 large eggs
1 tsp baking powder
2 over ripe bananas mashed
Method
1. Preheat the oven to 180ËšC
2. Grease and line a 2Ib loaf tin
3. In a large bowl whisk all of the ingredients together for two minutes
until the mixture is smooth
4. Pour into the tin and bake for about 50 minutes or until well risen
and a skewer comes out clean when inserted into the middle
5. Remove from tin and leave to cool on a wire rack
Tip-
The blacker the bananas the better!
