CHOCOLATE SPONGE CAKE

 

Everybody loves chocolate so this easy chocolate sponge is great to make for a birthday present. It only takes 20 minutes to bake and even less to prepare so is good for busy Mum's and will definitely impress at childrens' parties. The recipe can also be used to make butterfly cakes. fairy cakes and pinata cakes; which are my favourite due to  the reactions you get when the birthday boy or girl sees their favourite sweets inside.

 

Ingredients

 

3 eggs

Caster sugar

Unsalted butter

Self-raising flour

55g cocoa powder

 

Method

 

1. Preheat the oven to 180ËšC. Grease and line two 23cm sandwich tins

2. Weigh the three eggs together with their shells and measure the same weight of sugar,

flour and butter. For example if the three eggs weigh 180g use 180g of sugar, 180g of butter and 180g of flour

3. Remove 55g of the flour and replace this with the 55g of cocoa powder

4. Place the butter and sugar into a bowl and cream together until it turns pale and creamy

5. Add one egg and sieve approximately a third of the cocoa powder and flour into the bowl. Whisk this on a low setting until thoroughly combined

6. Repeat the same process of adding an egg and a third of the cocoa and flour until all has been added and thoroughly combined

7. Divide the mixture between the two tins and bake in the preheated oven for approximately 20 minutes, when cooked the cake should feel spongey and a skewer should be removed clean when inserted into the middle

8. Let the sponge cool on a cooling rack before filling and decorating, why not use ganache, whipped cream or buttercream

 

Tip- Use high quality cocoa pwder not drinking choocolate for the best bake and taste.
