HAM, CHEESE AND VEG MUFFINS
The recipe I used for these savoury muffins can easily be adapted using your favourite savoury ingredients. Why not add meat such as ham, pepperoni, sausage or chicken, vegetables such as mushrooms, peppers, tomatoes and sweetcorn and extras such as cheese and herbs to create a great tasting muffin.
Make mini muffins for a buffet or picnic!
Ingredients
225g self-raising flour
1 tsp baking powder
75g melted butter
175 ml milk
1 egg
200g consisting of vegetables, meat or cheese of your choice (I used green pepper,
tomatoes, ham and cheddar)
Method
1. Preheat the oven to 180ËšC
2. Place 12 muffin cases into a muffin tin
3. Combine the flour and baking powder
4. Stir in the melted butter
5. Add eggs and milk and stir thoroughly to combine all ingredients
6. Add the 200g of your choice and stir, ensuring ingredients are evenly distributed
7. Spoon mix into the muffin cases
8. Bake for 20-25 minutes, until the top is golden and a skewer comes out clean
Tip
I added a teaspoon of lazy garlic to cheese, ham and tomato muffins which gave them an Italian feel and a delicious taste!
